Lime Mint Mousse Cake with a Buttery Biscuit Base

This lime mint mousse cake is cool, creamy and full of fresh citrus flavor. With a buttery biscuit base and a light lime-mint filling, it makes an easy make-ahead dessert for warm days, family meals or summer gatherings.

Fresh Lime Mint Mousse Cake Ingredients

  • 200 g digestive biscuits
  • 80 g melted butter
  • 300 g cream cheese
  • 250 ml whipping cream
  • 90 g sugar
  • Zest and juice of 2 limes
  • 8 fresh mint leaves, finely chopped
  • 8 g powdered gelatin
  • 3 tablespoons cold water

How to Make Lime Mint Mousse Cake

1. Prepare the biscuit base

Crush the biscuits into fine crumbs and mix with the melted butter. Press firmly into the bottom of a lined 18–20 cm cake ring or springform pan. Refrigerate for 20 minutes.

2. Make the lime mint filling

Beat the cream cheese with the sugar, lime zest, lime juice and chopped mint until smooth.

Sprinkle the gelatin over 3 tablespoons of cold water and let it stand for 5 minutes. Gently warm until dissolved, then gradually mix it into the cream cheese mixture.

3. Fold in the whipped cream

Whip the cream to soft peaks. Gently fold it into the lime mixture until light and evenly combined.

4. Chill until set

Pour the mousse over the chilled biscuit base and smooth the top. Refrigerate for at least 5 hours, or preferably overnight.

Tips for the Best Result

Use fresh lime juice for the brightest flavor and add mint lightly so it does not overpower the dessert. Before serving, decorate with fresh mint leaves, lime slices and finely grated lime zest.
