These crispy potato cheese stacks are golden on the edges, tender in the center and easy to serve.
Thin slices of potato are layered with butter, herbs and cheese, then baked until crisp.
Cut the potatoes into very thin slices, ideally with a mandoline, so they bake evenly.
Toss the slices with melted butter, garlic, thyme, salt and pepper. Stack them in an oiled muffin tray with a little cheese between layers.
Bake at 190°C for 35 to 40 minutes, until the tops are golden and the centers are tender.
Use potatoes of similar size for neat stacks. Let them rest for 5 minutes before removing them from the tray.
