Crispy Zucchini Rolls with Feta and Mozzarella

  • 150 g feta cheese

  • 8 sheets of brick pastry or phyllo pastry

How to Make Crispy Zucchini Rolls

Prepare the zucchini

Grate the zucchini and squeeze out as much water as possible using a clean towel. This step is important because too much moisture can soften the pastry during baking.

Make the filling

Place the zucchini in a bowl. Add the crumbled feta, shredded mozzarella, egg, parsley and black pepper. Mix until the filling is evenly combined.

Shape the rolls

Cut each pastry sheet in half if needed. Place a spoonful of filling near one edge, fold the sides inward and roll tightly. Brush each roll lightly with olive oil for a golden finish.

Bake until crisp

Place the rolls on a baking tray lined with parchment paper. Bake at 190°C for 18 to 22 minutes, turning once if needed, until they are crisp and golden.
