Crispy roasted chickpeas are an easy snack, but they often leave the oven browned outside and soft inside. The reliable approach is to remove as much surface moisture as possible, add oil sparingly, and give the chickpeas enough space to roast.
Heat the oven to 200°C / 400°F. Drain and rinse the chickpeas, then spread them on a clean towel. Pat thoroughly dry and remove any loose skins. Moisture left on the surface creates steam, which delays crisping.
Transfer the dry chickpeas to a large rimmed tray. Roast them without oil for 10 minutes. Carefully shake the tray, add the olive oil, and toss until the chickpeas have only a thin coating.
Return the tray to the oven for 20 to 30 minutes. Shake it every 10 minutes so the chickpeas color evenly. They are ready when golden, dry to the touch, and crisp after a brief cooling period.
Mix the paprika, cumin, garlic powder, salt, and pepper. Toss the hot chickpeas with the seasoning as soon as they leave the oven. Adding dry spices late reduces the chance of scorching them during the longer roast.
Cool completely in a single layer before serving or storing. Trapped warmth creates condensation, so avoid sealing them while hot. For the best texture, eat them the same day; revive leftovers for 5 minutes in a hot oven.
Drying well, using little oil, and seasoning after roasting are the three details that make canned chickpeas reliably crisp instead of merely browned.
