Ripe bananas naturally sweeten the mixture, while oats add texture and chocolate chips make the bars more satisfying.
Peel the bananas and mash them in a bowl with a fork until mostly smooth. A few small pieces are fine and help the texture.
Add the rolled oats, honey and a pinch of salt if using. Stir until the oats are evenly coated and the mixture holds together.
Fold in the chocolate chips. Keep a few aside to sprinkle on top before baking if you want a more visible finish.
Press the mixture into a small lined baking dish. Bake at 180°C for 18 to 22 minutes, until firm and lightly golden.
