Easy Cheesy Zucchini Flan You’ll Want to Make Again

Soft zucchini Gruyere flan is a simple savory dish that works as a light meal, side dish, or lunchbox slice.

The zucchini becomes tender while the egg mixture sets into a soft texture.

Gruyere adds a gentle nutty flavor without making the flan heavy.

Ingredients for 6 servings

  • 600 g zucchini
  • 4 eggs
  • 200 ml cooking cream
  • 100 ml milk
  • 120 g grated Gruyere
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pinch nutmeg

Prepare the zucchini

Preheat the oven to 180°C. Slice the zucchini thinly. Heat olive oil in a pan and cook the zucchini with garlic for 6 to 8 minutes, until slightly softened.

Make the flan mixture

Whisk eggs, cream, milk, salt, pepper, and nutmeg. Add parsley and half the Gruyere.

Bake until set

Place the zucchini in a greased baking dish. Pour over the egg mixture and top with the remaining Gruyere. Bake for 35 to 40 minutes, until set and lightly golden.

Conclusion

This zucchini Gruyere flan is soft, savory, and easy to prepare. Let it rest for 10 minutes before slicing for cleaner portions.
