Creamy Potato and Onion Soup Made in the Slow Cooker

This slow cooker potato and onion soup is creamy, simple and comforting without needing much attention.

Potatoes give body, onions add sweetness, and slow cooking makes the texture soft enough to blend easily.

Ingredients for 4 servings

  • 700 g potatoes, peeled and sliced
  • 2 large onions, thinly sliced
  • 2 garlic cloves, minced
  • 900 ml vegetable broth
  • 120 ml cooking cream
  • 2 tablespoons olive oil
  • 1 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 tablespoon chopped parsley

How to make it

Prepare the vegetables

Slice the potatoes and onions evenly so they cook at the same pace. Add them to the slow cooker with garlic, broth, thyme, salt and pepper.

Cook slowly

Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the potatoes are very tender.

Blend and finish

Blend the soup until smooth, then stir in the cream. Adjust the seasoning and add parsley just before serving.

Helpful tips

For a thicker soup, use a little less broth. For a lighter texture, add extra broth after blending until the consistency feels right.

Conclusion

This slow cooker soup is practical for busy days. It is warm, economical and easy to serve with bread or a simple salad.
