Roasted peaches creme brulee is an easy summer dessert with warm fruit, smooth vanilla cream, and a crisp caramelized sugar top.
It feels special but needs only simple ingredients.
Place the peach halves in a baking dish, cut side up. Brush with melted butter, drizzle with honey, and bake at 180°C for 18 to 22 minutes, until tender.
Whisk the egg yolks with 30 g sugar. Heat the cream with vanilla until steaming, then slowly whisk it into the yolks. Return to low heat and stir until lightly thickened.
Spoon a little vanilla cream over each roasted peach half. Keep the layer thin so the peach flavor stays clear.
Sprinkle brown sugar over the cream and caramelize with a kitchen torch. If you do not have a torch, place the peaches briefly under a very hot grill, watching closely.
This dessert works best with ripe but firm peaches. Roast them until soft, then caramelize the sugar just before serving for the best contrast.
