This quick chocolate yule log is made with a soft cocoa sponge and a simple express ganache. It looks generous and festive, but the method stays easy enough for a relaxed homemade dessert.
Preheat the oven to 180°C. Whisk the eggs and sugar for 5 minutes, until pale and foamy. Sift in the flour, cocoa, baking powder, and salt, then fold gently. Spread on a lined baking tray and bake for 10 to 12 minutes.
Turn the sponge onto a clean sheet of baking paper. Roll it gently while still warm and let it cool in that shape. This helps prevent cracks later.
Heat the cream until steaming, then pour it over the chopped chocolate. Wait 1 minute, stir until smooth, then add the butter and vanilla.
Unroll the sponge, spread a thin layer of ganache inside, then roll again. Cover with the remaining ganache and draw light lines with a fork for a log effect. Chill for 30 minutes before slicing.
The key is to roll the sponge while it is warm and to keep the ganache smooth but not too runny. This gives a neat chocolate yule log without complicated decoration.
