This no-sugar strawberry jam is a fresh, quick spread made with fruit, lemon, and chia seeds.
Since it does not contain sugar for preservation, it should be kept in the refrigerator and eaten within a few days.
Cut the strawberries into small pieces and place them in a saucepan. Mash them lightly if you prefer a smoother texture.
Add the lemon juice and lemon zest. Simmer over medium heat for 8 to 10 minutes, stirring often, until the fruit releases juice and softens.
Stir in the chia seeds and vanilla if using. Cook for 1 more minute, then remove from the heat. The mixture will thicken as it cools.
Spoon the jam into clean jars, let it cool, then refrigerate for at least 2 hours. Use within 4 to 5 days, or freeze small portions for longer storage.
This recipe is best for fresh chilled use, not shelf-stable storage. Ripe strawberries and lemon give the brightest flavor without needing added sugar.
