Ingredients

For the flan

  • 250 g ripe mango flesh
  • 3 large eggs
  • 100 g granulated sugar
  • 60 g cornstarch
  • 500 ml whole milk
  • 1 teaspoon vanilla extract
  • 1 pinch of fine salt

For the caramel

  • 80 g granulated sugar
  • 2 tablespoons water

Instructions

  1. Place the caramel sugar and water in a small saucepan. Cook over medium heat until amber, then pour into a heatproof round mold.
  2. Blend the mango with the milk until smooth.
  3. In a bowl, whisk the eggs, sugar, cornstarch, vanilla, and salt. Add the mango milk gradually and mix well.
  4. Strain the mixture for a smoother texture, then pour it over the caramel.
  5. Cover the mold with foil. Place it in a large pot with hot water reaching halfway up the mold.
  6. Cover the pot and steam gently for 40 to 45 minutes, until the center is set.
  7. Cool completely, then refrigerate for at least 4 hours before unmolding.
