Combine the breadcrumbs and milk. Leave for 5 minutes, then add the beef, egg, 30 g parmesan, garlic, salt and pepper. Mix gently and shape into 16 meatballs.
Heat the olive oil in a wide skillet over medium heat. Brown the meatballs for 6 to 8 minutes, turning regularly. Transfer them to a plate.
Cook the onion in the same skillet for 4 minutes. Add the spinach and stir until wilted. Pour in the cream and stock, then add 40 g parmesan.
Return the meatballs to the skillet. Cover and simmer gently for 12 to 15 minutes, until cooked through and tender.
