Refreshing Cold Melon Soup with Ginger

This cold melon ginger soup is fresh, fragrant, and quick to prepare. Sweet melon, lime, mint, and a small amount of ginger create a light summer starter with a bright finish.

Ingredients

  • 800 g ripe melon, peeled and cubed
  • 1 teaspoon fresh ginger, finely grated
  • 2 tablespoons lime juice
  • 120 g plain Greek yogurt
  • 6 fresh mint leaves
  • 1 tablespoon olive oil
  • 1/4 teaspoon fine salt
  • 1 small pinch black pepper
  • 4 ice cubes, optional

How to Make Cold Melon Ginger Soup

Cube the melon

Use ripe melon for the best flavor. Remove the seeds, peel it, and cut the flesh into cubes. Chill the melon before blending if you have time.

Add ginger and lime

Place the melon in a blender with the grated ginger, lime juice, yogurt, mint, olive oil, salt, and pepper.

Blend until smooth

Blend until the soup is completely smooth. For a colder texture, add the ice cubes and blend again for a few seconds.

Chill before serving

Refrigerate for at least 30 minutes. Serve in small bowls with extra mint, diced melon, or a few drops of olive oil.

Conclusion

The ginger should stay subtle, not overpower the melon. Start with a small amount, taste, and adjust before chilling the soup.
