This baked fish with plantains is a flavorful one-dish meal made with tender white fish, soft ripe plantains and warm spices.
Easy to prepare and ideal for a family dinner, the plantains are partially cooked first before the fish is added, helping both ingredients reach the right texture.
Mix the olive oil, lemon juice, garlic, paprika, ginger, cumin, salt and pepper in a small bowl.
Brush the fish fillets with half of the seasoning mixture. Cover and leave them to rest for 10 minutes while preparing the plantains.
Preheat the oven to 190°C. Peel the plantains and cut them into thick diagonal pieces.
Arrange them in a baking dish, add the remaining seasoning and pour in the broth. Bake for 15 minutes.
Remove the dish from the oven and place the fish fillets over the plantains. Bake for another 12 to 15 minutes, depending on the thickness of the fish.
The fish is ready when it is opaque and flakes easily with a fork.
Use ripe yellow plantains rather than green ones for a softer, slightly sweet result. Check the dish during cooking and add a small splash of broth if it begins to dry out.
Sprinkle with parsley or coriander before serving. Enjoy this dish with a green salad, steamed vegetables or a small portion of rice.
